Everglades Hotel Wedding Menus
Our Chefs bid you welcome to the Everglades dining room where we offer a table d’hôte dinner menu consisting of a choice of two starters, two main courses and two desserts. Breakfasts are full “English”-style.
Depending on the number of guests these meals are served either plated or buffet-style.
Our Copper Kettle Coffee Shop is open from 10:00 to 15:30 daily and offers a selection of light meals such as Soups, Curries, Toasted Sandwiches, Savoury Pancakes, Trout, etc at very reasonable rates. Weather permitting, these meals can be served in the gardens overlooking the pool.
Starters:

- Home-made Soup served with bread rolls. Choose one of the following:
- Butternut Soup topped with Double Cream and Parsley Pesto
- Roasted Tomato and Walnut Soup served with Sour Cream
- Smoked Trout Roulade served on a bed of Butter Lettuce & Ciabbata Bread.
- Hake Mornay
- Chicken Liver Pate or Trout Pate served with Melba Toast.
- Warm Potted Shrimps with Stuffed Tomatoes and Herby Crust.
- Piquant Shrimp Cocktail marinated in a Thousand Island Sauce
Main Courses:
Choose two of the following
- Roast Topside of Prime Beef rubbed with Barbeque Spices, served with Potato Croquettes, and a Red Wine Burgundy Jus.
- Slow cooked Leg of Pork with Spicy Crackling and Apple sauce.
- Leg of Lamb rubbed with Fresh Mint and Lavender accompanied by a Port Wine Jus.
- Glazed Rolled Gammon with Apricots.
- Thai Chicken Curry served with Fluffy Rice infused with Mustard Seeds.
- Beef Wellington served with Mushrooms and a Red Wine Reduction.
- Whole Midlands Trout, Grilled and served with Fennel & Almonds.
- Traditional Italian Beef Lasagne or Spinach & Feta Lasagne or Butternut & Feta Lasagne

The standard Wedding Package rate is based on the meal being served “Carvery” or “buffet”-style.
